Ingredients for the Satay
- 500g Chicken Thighs, Cut into small cubes
- 400ml Coconut Milk
- 1 tsp ground tumeric powder
- 1 tsp ground coriander powder
- 2 tsp ground cumin powder
- 2 cloves of garlic, crushed
- A little bit of chilli oil
Ingredients for the Peanut Sauce
- 3 tbps peanut butter
- 6 tbps chicken or beef stock
- 1/2 tsp chilli oil
- 1 tsp light soya sauce
- 1 tsp sesame oil
Method
- Marinate the chicken pieces in all the ingredients for satay for at least
3 hours.
- Put the chicken pieces onto wooden skewers (maximum of 4 pieces per skewer).
- Either put them under a hot grill or over a hot barbecue for about 10-15
minutes, turning occasionally.
- For the sauce, simply mix all the ingredients for the peanut sauce together
until it becomes smooth.
- Serve with cucumbers (cubed) and peanut sauce.
