Method:

  1. Boil the eggs for 10 minutes. Dish up and lightly crack the shell.
  2. Put the star anise and tea leaves into muslin bag, boil with the seasoning.
  3. Put the egg into the herbal tea mixture and simmer for 20 minutes
  4. Soak the eggs in the mixture for at least half a day before serving

Tea Leaf Eggs is a traditional Shanghainese snack, and I just love to eat this and wash down with a nice pot of tea....
