  1. Chill the beef in the freezer for a few minutes until firm but not frozen - this will make it easier to cut. Cut into slices about 3mm thick across the grain, then cut into strips about 3mm across and 2.5cm long.
  2. As close as possible to the serving time, mix the beef with sugar, sesame seeds, soya sauce, pepper and finally sesame oil.
  3. Peel and core the pear and cut into matchsticks. Toss them in a little lemon juice to prevent browning if not serving the dish immediately.
  4. Arrange the meat in a mound in the middle of a plate. Arrange pear pieces around, then make a dip in the centre and carefully put the egg yolk in it.
  5. Scatte the pine nuts.
  6. Mix meat with yolk and pear at table.

This is a Korean version of steak tartare, flavoured with pear, sesame oil, soy sauce and pine nuts. This will serve 4 as a starter (or 2 as a main course, or 1 just for myself)
